《风味人间》:美食背后的故事 | 有声双语

继《舌尖上的中国》后,中国人胃里的馋虫,又被另一部美食纪录片《风味人间》勾起。但在纪录片总导演陈晓卿看来,这个节目并不只是美食纪录片这么简单。

If you love to eat, you should definitely take a look at Once Upon a Bite. It’s the latest TV series from Chen Xiaoqing, chief director of A Bite of China.

如果你喜爱美食,你绝对应该看一看《风味人间》。这是《舌尖上的中国》总导演陈晓卿的最新作品。


The eight-episode documentary takes viewers to over 20 nations and regions across six continents. We are introduced to more than over 160 types of food. Some are the types that are served in the restaurants of the world’s great cities, although we also learn about the simpler dishes cooked by people at home.

这部8集纪录片带领观众前往6大洲的20多个国家和地区,领略160多种食物:有世界各大城市餐厅中的菜品,也能学到一些简单的家常菜。



But the program is more about the culture of getting and preparing food than particular dishes.

但这一节目更多的是关于获取并准备食材的文化,而非具体的菜肴。


The first episode is called “Between the Mountain and the Sea”. It shows how people who live in challenging environments learn how to make food with what they can get directly from nature.

第一集名为《山海之间》,展现了生活在艰苦环境中的人们是如何从大自然就地取材、制作食物的。


One example is a dish made by herders from Xinjiang Uygur autonomous region. The dish is freshest lamb, cooked directly after being stripped from the bone of the animal.

新疆维吾尔自治区的牧民们所做的一道菜便是一个例子。这道菜是最新鲜的羔羊肉:羔羊去骨之后便直接下锅烹煮。



Black Marlin is a popular dish served at dinner tables in Taiwan in the wintertime. In another scene from the first episode we learn how it gets to those tables. We see how a young fisherman, spear in hand, can wait all day for a Marlin to appear. Some days he catches nothing at all. But, just like the hero of the famous Hemingway novel The Old Man and the Sea, he never gives up.

旗鱼是台湾冬令时节晚饭桌上大受欢迎的一道菜。在第一集的另一个场景中,我们知道了这些鱼是怎么到达餐桌的。我们看到,为了等一条旗鱼现身,一名持矛的年轻渔夫能够等上一整天。有些日子他一整天都一无所获。但正如海明威的名著《老人与海》中的主人公一样,他永不放弃。


This scene sums up what Once Upon a Bite is all about. As Chen told China Daily, the program relates food to life experiences. “Food is always connected with people. Behind the mouthwatering images are personal stories that reflect people’s living situations and attitudes.”

这一场景概括出了《风味人生》的核心。正如陈晓卿在接受《中国日报》采访时所言,这个节目将美食与人生经历联系到了一起。“食物向来与人类息息相关。在令人垂涎三尺的图像背后,反映的是关于人们生活环境和态度的个人故事。”



The program explores the great variety of ways that food is hunted, gathered, prepared and eaten in the world. But with all this variety, does the show tell us one definite thing about food? Perhaps it’s simply that we are what we eat. Chen thinks that food is about culture, not just our natural need to eat and nourish ourselves. “Culture lies in diet, not out of it. Food itself is culture in nature, created and enjoyed by mankind,” Chen said.

该节目探索了世界各地寻找、获取、准备以及食用美食的多样化方式。而通过这些多样性,节目是否告诉了我们一个关于食物的明确主题呢?或许那就是“人如其食”。陈晓卿认为,食物与文化有关,并不仅仅是我们吃饭获得营养的自然需求。“文化就在饮食之中,没有与其脱节。食物本身就是由人类创造并享用的文化,”陈晓卿如此说道。
